Creamy French Onion Dip

  • 2 tablespoons olive oil

  • 2 large sweet onions, sliced

  • 4 medium shallots, sliced

  • 2 cloves garlic, minced

  • 1 teaspoon salt

  • ½ teaspoon ground black pepper

  • 1 (16 ounce) container low-fat cottage cheese

  • 1 tablespoon chopped fresh thyme

  • 2 teaspoons chopped fresh marjoram

  • 1 tablespoon chopped fresh chives

  1. Heat olive oil in a large skillet over medium heat. Add onions, shallots, garlic, salt, and pepper. Saute, stirring occasionally, until onions are browned and caramelized, 15 to 18 minutes. If garlic begins to brown too much, add a few tablespoons water and continue cooking.

  2. Allow mixture to cool for 10 minutes. Transfer to a food processor and puree until smooth. Add cottage cheese, thyme, and marjoram; puree again until smooth. Stir in chopped chives.

  3. Serve immediately, or refrigerate dip for at least 1 hour or more to give the flavors time to combine.
