  1. Scrub the live mussels or clams under cold running water. Remove the beards from the mussels that are visible between the shells using your fingers.
  2. In a large pot, combine 4 quarts of cold water and 1/3 cup of coarse salt. Add the mussels or clams and soak for 15 minutes. Drain and rinse, discarding the water. Repeat this process twice more. Set the mussels or clams aside.
  3. Season the chicken thighs with salt and black pepper.
  4. For a charcoal grill, place a 16-inch paella pan* on the rack of an uncovered grill directly over medium-hot coals. Add oil to the pan, swirling to coat evenly. Place the chicken thighs, skin sides down, in the pan. Cook for about 10 minutes or until brown, turning them once. If using a gas grill, preheat the grill, reduce the heat to medium-high, place the pan on the grill rack over heat, cover, and grill as directed.
  5. Remove the chicken from the pan and set it aside.
  6. Add the sliced chorizo, chopped bacon, and pork pieces to the pan. Cook and stir for about 5 minutes or until they are browned on all sides.
  7. Add the chopped sweet pepper, onion, and garlic to the pan. Cook and stir for about 5 minutes or until the vegetables begin to soften.
  8. Add the uncooked rice to the pan and cook and stir until the grains of rice are light brown.
  9. Return the chicken to the pan. Add the chicken broth, chopped tomatoes, saffron threads or turmeric, smoked paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper to the pan. Bring it to a boil, cover the grill, and cook without stirring for 15 to 20 minutes or until the rice is plump but still slightly firm.
  10. Stir in the mussels or clams, shrimp or calamari, frozen peas or baby lima beans, snipped fresh Italian parsley, finely shredded lemon peel, and fresh thyme leaves. Cover and cook for an additional 5 to 7 minutes or until the shrimp is opaque, the mussels or clams have opened, and the chicken is no longer pink (with an internal temperature of 180°F).
  11. Discard any unopened mussels or clams.
  12. Let the paella stand for 10 minutes before serving to allow the flavors to meld together.

*Note: If you don’t have a paella pan, you can use a roasting pan that you don’t mind getting messy or a double layer of 13×9-inch disposable foil pans. If using foil pans, the time to bring the rice mixture to a boil will be increased (to about 20 minutes), and the covered cooking time will increase to about 30 minutes plus an additional 10 minutes after adding the shrimp or calamari.
