Southwest Cornbread Salad

  • 1 (9×9 inch) pan prepared cornbread

  • 2 cups chopped romaine lettuce

  • 1 (15 ounce) can black beans, rinsed and drained

  • 1 (15 ounce) can whole kernel corn, drained

  • 1 medium orange bell pepper, diced

  • 1 (14.5 ounce) can diced tomatoes

  • 1 cup shredded Cheddar cheese

  • 2 stalks green onions, thinly sliced


  1. Cube cornbread.

  2. Layer cornbread cubes, romaine, beans, corn, bell pepper, tomatoes, Cheddar cheese, and green onions in a large trifle bowl, in that order.

  3. Stir avocado, jalapeno, lime juice, cilantro, olive oil, cumin, and garlic salt for dressing in a bowl until well combined. Drizzle over salad.
