  • 2 cups chopped plum (Roma) tomatoes

  • 1 cup chopped Granny Smith apples

  • ½ cup chopped cucumber

  • ½ cup fresh or frozen corn kernels

  • ½ cup chopped red bell pepper

  • ¼ cup chopped green onion

  • ¼ cup chopped red onion

  • 3 tablespoons chopped fresh cilantro

  • 1 tablespoon chopped jalapeno chiles, seeds removed

  • 1 tablespoon balsamic vinegar

  • 1 ½ teaspoons white sugar

  • ¾ teaspoon salt

  • ½ teaspoon freshly ground black pepper

  1. Combine tomatoes, apples, cucumber, corn, bell pepper, green onion, red onion, cilantro, jalapeno chiles, vinegar, sugar, salt, and pepper in a bowl. Place in the refrigerator to marinate for at least 3 hours, or overnight. Serve cold.
